My go-to vegan breakfasts for summer-easy,healthy&yummy!

Hello hello beautiful human beings!

I can't believe summer is here and summer break is just one week away!

Sooo I pretty much finished school which means now I have finally the time to be back round here and make my blogging game strong.These last weeks/month of inactivity I had zero time to even think about writing on here or posting an insta pic buuut I managed to gather some ideas and write them down so now I just need put them all together and post!

If you clicked on this without reading the title,today I'm gonna present you my top vegan breakfasts to help you out if you don't know what else should you eat!

PANCAKES

So this is in my opinion the best breakfast for a Saturday morning.I always love to make pancakes on weekends!

But,this kind of pancakes is a healthy one so you can eat a stack with no guilt!

There are so many ways you can make them,add different spices,cacao,and when it comes to toppings,that's the best part!

RECIPE

2 chia eggs(2 tbsp chia seeds with 6 tbsp water)-let sit for 5 mins

2 cups of any kind of plant-based milk(I used coconut)+a bit of lemon juice

1 tsp of vanilla extract

1 tbsp of maple syrup or agave

3 cups of flour(any kind you have works)

1 tsp baking powder

cacao powder(if you want-add as much as you like)

Mix everything,grease your pan with a bit of coconut oil and there you have it!

Toppings of choice(I used tahini and fresh fruits)

AVOCADO TOAST

Pretty much self explanatory,but even though is very easy and may sound boring,it's veeeery healthy and also veeeery delish!Avocado has a lot of healthy fats in it as well as a ton of other good stuff.

Now,it depends on how much time you have:if you are in a rush,just toast the bread,add a drizzle of olive oil,scoop the avo and press it with your fork and ur done,buuut,if you're like me and you want to put some effort in your food and take pics of it,put the avo in a blender along with some green onion,salt,pepper and olive oil,mix and then serve it with more green onion(if you're not going on a date,but if you do that might be a problem) and a bunch of veggies(I love the avo and tomato combo as weel as avo and cucumber or avo and olives).

CHIA SEED PUDDING

Now,this may sound or look fancy,but it really takes 5 min to prep it and throw it in the fridge overnight(if you're not like me and spend an extra hour to decorate it and take 100 pics).

So it's no magic recipe: chia seeds and plant-based milk of choice(works best w coconut in my opinion).The magic stays in the toppings,so you can go crazy. :))

SMOOTHIE BOWLS

Now this is a perfect breakfast for them hot summer days coming!

Also,when you make smoothie bowls,you don't have to follow a recipe,you just throw some fruits that you already have at home in a blender and ur done.

I usually like my smoothie bowls to be more consistent,so I put a frozen banana in there(life hack).

For the smoothie bowl in this pic I used a frozen baby banana,a kiwi,pineapple,coconut water and for the toppings: leftover kiwi and homemade granola(aka oven baked oats with a mix of seeds and cinnamon).

OATMEAL

So,I saved the best for last:))

Now,this is what I call a perfect breakfast:v healthy,super delicious,easy to make and never boring cause you can make it with literally anything(ok don't go that far).

So,you probably already know how to make a bowl of oatmeal,you've seen it everywhere,but if not..: oatmeal+water/milk,mix in a pot on medium heat until you have that creamy consistency and then,go crazy with them toppings man! :))

In the 1st picture: oatmeal topped with a bunch of fresh strawbies(cause it's the season) and tahini(aka crack aka my life).

2nd picture: oatmeal topped with caramelized apples(sliced apples,a tiny bit of water and cinnamon,keep it on the heat until soft),sliced almonds and a drizzle of tahini(told you it's my life).

Here,the posibilities are endless: make it with cacao powder and fresh strawbs,or put turmeric and top it with banana,blueberries and raspberries(you can see that pic on my insta),or make it tropical with mango,passion fruit or papaya,whatever your heart desires.
