Vegan PB Cookies

Hellooo!Wow,long time no bloggin...but I'm back and today I'm coming at you with a different post.
Lately I've seen everywhere on social media all kinds of ,,healthy" recipes for the new year(,,new you").
So,I thought why not start blogging about health and a healthy lifestyle in general,because I am very interested in this kind of lifestyle and I saw(after the polls on my insta:)) ) that you guys are too,and what is a better way to start changing your lifestyle than changing the junk foods with a lot of processed sugars in them with healthy(but as delicious) versions.
Living a healthy..or healthier lifestyle really changes you.In my case,I've been almost vegan(I say almost because I still eat eggs like once a month or two and same with cheese-but very rarely) since summer '17 and the way I improved my eating habits and lifestyle really changed me.It's better to cook at home and to really know what you are consuming,than going to a fast-food and giving your body unsaturated fats,sugars and a lot of other gross and bad stuff.(so,maybe think twice when you're about to head over to McDonald's drive thru).
I would really love to go more in depth of these subjects(living a healthier lifestyle/being vegan/vegetarian) but that's not what I'm talking about today-let me know if you would like to see a blog post about those.

So,let's get to our recipe:
DRY INGREDIENTS:
1 cup of gluten-free oat flour(you
can use any tipe of flour of your choice)
1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 tsp of cinammon
WET INGREDIENTS:
2 tablespoons of coconut oil
1/4 cup of pure maple syrup(you can add more based on your taste)
2 chia or flax eggs(mix 2 tbs of chia seeds with 6 tbs of water and let it sit for 15 mins)
1 tsp of vanilla extract
1 cup of unsalted creamy peanut butter
INSTRUCTIONS
1.Preheat oven to 176 and line a baking
sheet in your tray.
2.In a bowl,wisk together all the
ingredients(first the dry ones,then add the wet ones) until they form a doughy mixture.
3.Scoop the cookie dough balls and space them evenly.
4.Then,with a fork,press down lightly to flatten the cookies.(you can do this both directions to create a crisscross pattern on top)
5.Bake for 10-18 minutes(check with a toothpick if the inside is ready).
6.Transfer the cookies to a plate,let them cool for 10 minutes,and enjoyyy!
*you can store them in the fridge for a couple of days.
These cookies are so good,the're crispy on the outside and soft on the inside omg I love them.
